My thighs are fully intact and blossoming as I write.
After a rather lengthy bout with the flu, while my husband is off galavanting around some foreign county I might add, I was finally able to make it to the store in hopes of purchasing a rotisserie chicken.
My appetite has been rather off-kilter for at least a week if not more.
I felt quite confident that a significant amount of poundage had disappeared while I viewed countless episodes of ‘Victoria’ and almost all of the Olympic games.
The poundage is still around but I did have some down time to look up the Olympic host city of PyeongChang, as I have always wanted to know where it was!
Not really.
I have never heard of the place and have no intention of visiting, especially after learning that the consumption of Labradors is on their list of fun things to do.
Back at the store, there were no rotisserie chickens to be found nor were there any fresh chicken breasts on the chicken aisle.
My eyes were beginning to glaze over as I grabbed a package of chicken thighs, knowing full well I did not eat dark meat.
It was just as well, my appetite was gone yet again so I took my place with Queen Victoria back on the sofa.
Eventually the appetite returned and I decided to give those thighs a whirl.
They were amazing.
Crispy skin on the outside and very tender and flavorful on the inside. It took all of five minutes to prep the thighs and 45 minutes in the oven, which was just enough time to see what Victoria and Albert were doing.
It is important to rinse and pat the thighs dry before seasoning.
After a quick sear on top of the stove in a dutch oven, they go straight into the oven until cooked through.
A simple dish, served with rice was just perfect for me and Grits the Labrador to have for supper, as my husband is still away.
Actually he is with his pals of 30 years or more on their yearly trek to a very impoverished country, doing what they always do to help better the welfare and health of those who cannot help themselves.
Very noble and selfless indeed.
He did inform me last year that the feline population was all but gone and there was talk about Kitty Soup, Country Captain Cat and the sorts.
He may have been kidding around but I keep a list of fun places not to visit and they are on it along with PyeongChang.
Enough about all of that, Victoria and Alfred are returning from their honeymoon.
I wonder what they had for supper?
Crispy Chicken Thighs
4 chicken thighs, washed and patted dry
Cavender’s seasoning
Olive oil
2 sweet onions, peeled and thickly sliced
Preheat the oven to 400 degrees. Season the chicken thighs on both sides liberally with the Cavender’s seasoning. Heat the olive oil in a dutch oven on top of the stove to medium-high heat. When the oil is hot, place the thighs in the pan and cook for 4-5 minutes on each side. Remove the thighs to a platter and place the thickly sliced onions in the bottom of the pan. Place the chicken thighs on top of the onions. Cover the pan and place in the oven for 45 minutes or until the thighs are done.
