Thirteen adult students gathered at the Indianola Community Wellness Center for their free two-hour cooking class with instructors Calli Cole and Edna Ball. The class is provided by MS State Extension Service through Mississippi State University.
This week, lesson 2 focused on Choosing Fruits, Vegetables, and Whole Grains.
Tips were shared on selecting fresh, canned, and frozen vegetables. Choose canned and frozen items with no sugar, no sodium, or low sodium. Select foods with color- this offers different nutrients, and choose whole wheat/grain products.
Students prepared and shared Barley Jambalaya, Baked Tortilla Chips, and Fruit Salsa.
At the end of the session, instructors challenged students to implement selected leftover food items given to them as they prepare meals for their families and share the results with the class next week.
